Low Sugar Energy Bites

I spent the week on Vancouver Island this week teaching lunch & learns in some pretty remote areas. Before I left, I threw together some energy bites for my mid afternoon snack. I wasn't following a particular recipe, but they turned out so well that I thought I'd share them with you.

Ingredients:

  • 1 cup almonds
  • 2 TBSP coconut oil
  • 2 TBSP nut butter (I used peanut butter)
  • 1/4 cup raw cacao powder (cocoa powder works too)
  • 4 Medjool dates, pitted
  • 1/4 cup coconut flakes

Directions:

  1. Place the almonds in the food processor and grind until they're a flour like consistency.
  2. Add the remaining ingredients and blend until a dough like consistency forms.
  3. Roll into balls and store in the freezer
