2 Minute Salad Dressing

As the warm weather is finally upon us, I’ve been on a pretty big salad kick lately!  The salads have been a mish mash of whatever is in the fridge.  While I’d like to say that I have been nicely making a big batch of salad dressing in advance, that just has not been the case.  Instead, it’s been a mad scramble in the morning to throw together a salad dressing that will give my leafy greens some flavour.  So I thought I’d share with you what my go-to salad dressing recipe is, since it’s SUPER fast, and incredibly delish!  Once you have tried it a few times I promise you can make this in two minutes flat!  🙂

I will add that no salad is complete without some avocado, so while it’s not in this salad dressing recipe, I almost always put some avocado in which makes it creamier!

Ingredients:

  • 1 TBSP olive oil
  • 1 TBSP apple cider vinegar
  • 1 tsp tamari
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard, sulfite free (note this makes it quite strong tasting…I recommend starting with a ½ tsp if you’re unsure if you’ll like the strong taste)
  • cracked pepper, to taste
  • cayenne pepper, to taste

Directions:

  1. I put all the ingredients in a salad dressing container, shake it up, and put it in my lunch bag so I can dress the salad later. Unless of course it’s a kale salad, in which case you can dress it early as it won’t wilt.
