The Feelin’ Fresh Salad

Here in Vancouver, it’s spring. The blossoms are out and it’s not crazy cold. Though it’s raining….a lot. The honeymoon of my first 2 weeks of sun have ended. It’s still an amazing city though.

Anyway, as spring comes, I find I crave more salads and cooler foods vs warmer foods like soups and cooked veggies. This is also the perfect “Get back on track” recipe if you’ve had a big weekend out as it’s full of nutrient rich, water rich fruit and vegetables.

Ingredients:

  • ½ cup uncooked quinoa
  • 2 packed cups arugula, chopped
  • 1 cup packed spinach, chopped
  • 1 red pepper
  • 1 gala apple, chopped
  • ½ cucumber, chopped
  • 2 TBSP olive oil
  • ½ lemon, well squeezed (2-3 TBSP)
  • ⅛-1/4 tsp pepper to taste Herbamere (or sea salt)
  • Feel free to add any fresh herbs you have in the fridge

Directions:

  1. Cook quinoa according to package instructions
  2. Chop all remaining ingredients and place in bowl
  3. Pour dressing overtop
