Garlic Roasted Cauliflower

Cauliflower is one of my go-to detox veggies, as it is high in the compound, Indole 3 Carbinol, which is very anti-inflammatory and proven to have anti-cancer abilities.

Much like broccoli and cabbage, cauliflower is a member of the cruciferous vegetable family, which are wonder foods in my opinion! All are super high in fiber, anti-inflammatory and super high in vitamins, particularly Vitamin C.

In the last couple of weeks, I’ve actually been to two different restaurants (Patria & Market Table) that had roasted cauliflower on their menu that was amazing, so that is the inspiration for today’s post!

Ingredients:

  • 1 head cauliflower
  • 1 TBSP coconut oil, melted
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • salt & pepper to taste

Directions:

  1. Preheat oven to 400F
  2. Melt coconut oil
  3. Mince garlic
  4. Chop cauliflower into large chunks
  5. Toss cauliflower, garlic, red pepper flakes & coconut oil in a bowl.
  6. Place on a baking sheet, lined with parchment paper.
  7. Bake for 15 minutes, then flip and bake another 5-10, until fully cooked and crispy on the outside.
