3 Dressing Recipes to Make You Love Salads Again

Let's face it, nobody likes a boring salad! We've had so many clients ask us for salad dressing recipes and with summer in full swing, we thought there would be no better time to share some of our favourites.

For the most part, the ingredients can be modified to accommodate what you have in your cupboard. For example, lemon juice, apple cider vinegar and red wine vinegar are often interchangeable. You can substitute tamari for coconut aminos or soy sauce if you don't have either of those. Honey and maple syrup can also be exchanged for one another. You can also add or remove tahini in dressings to make them creamy or a vinaigrette.

Green Goddess Dressing (or dip)

This recipe is a slightly modified version of the dressing from my salad collaboration with Field and Social. If you're in Vancouver, you can visit one of their two (soon to be three) locations and grab my Green Refresh salad. Be sure to snap a pic and tag me on Instagram!!

Depending how much water you add to this recipe, the dressing can actually be quite thick and work really nicely as a dip with veggies, or a spread/topping on burgers.

Serves 8-10

Ingredients:

  • 1 clove garlic
  • 1/4 cup fresh curly parsley
  • 1 packed TBSP fresh basil
  • 1/4 cup avocado (about 1 large)
  • 2 TBSP tahini
  • 1/4 cup olive oil
  • 1/4 cup water (plus more if too thick)
  • 1 TBSP lemon juice
  • 1 TBSP apple cider vinegar

Directions:

  1. Using a food processor, turn it on empty and drop the peeled whole garlic clove in until well minced. If you don't have a food processor, simply mince the garlic normally.
  2. Then add all remaining ingredients, except the olive oil and water to the food processor and blend.
  3. While it's blending, pour in the olive oil and water through the top and keep blending until well mixed.

*You could also make this recipe in a blender, but make sure to add the water and oil from the beginning.
