Swiss Chard Salad

Hey everybody!

This is a super fast and simple salad, and is actually a really creative way to eat Swiss chard. I’ve already re-made it, like, 5 times! Enjoy 🙂

Serves:

4-6

Ingredients:

  • 1 large head Rainbow swiss chard, de-stemmed and chopped (not the red chard)
  • 4 TBSP olive oil
  • ⅓ cup almond meal
  • 1 clove garlic, minced
  • sprinkle of red pepper flakes
  • 1 lemon
  • ¼ cup nutritional yeast

Directions:

  1. Wash and de-stem chard, stack and roll the leaves like a cigar and chop into thin ribbons and place in a bowl
  2. Heat 2 TBSP olive oil over low-med heat
  3. Add almond meal to the pan and sauté for 3-4 min, until it’s browning
  4. Add minced garlic, salt and pepper and a pinch of red pepper flakes and cook another 2-3
  5. min - then remove from heat
  6. Zest the lemon and juice it, and mix zest and juice in a small bowl with the other 2 TBSP olive oil
  7. Mix the lemon/oil in to the Swiss chard and then mix in the almond meal
  8. Top with nutritional yeast
