Pumpkin Spice Bites

Happy Pumpkin Spice Month everyone!

If you’ve been on the blog for a while, you’ll know that last year I got majorly in to the Pumpkin Spice scene. After reading the ingredients in a Starbucks Pumpkin Spice Latte, and nearly falling over from shock, I decided to create my own, homemade, healthier version.

These guys are the perfect on-the-go snack, and in fact, I took some with me when we did an epic hike this past weekend!

They are:

  • Gluten free
  • Dairy free
  • High in Omega 3s (great for skin / inflammation)
  • Free of refined sugar (dates are the only sweetener)
  • The perfect snack (1 or 2 per serving)

Ingredients:

  • ½ cup walnuts
  • 1 cup pitted Medjool dates (I used Natural Delights)
  • ⅔ cup pumpkin puree
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp + ⅛ tsp allspice
  • ¼ cup hemp seeds/hearts
  • ¼ cup unsweetened coconut flakes + ¼ cup for rolling in

Directions:

  1. In a food processor, add the medjool dates and walnuts and pulse until well mixed
  2. Then add the remaining ingredients, saving ¼ cup of coconut flakes for the end to roll them in
  3. Mix everything well in the food processor
  4. Place ¼ cup of coconut flakes in a small bowl
  5. Wet your hands so the pumpkin mixture doesn't stick, and using a regular spoon, scoop a spoonful into your hands and roll into a ball
  6. Then roll in the coconut mixture and place on a plate
  7. Do this for all of them and you should end up with about 16 bites
  8. The dough will be a little moist, so it's best to refrigerate or freeze them right after, and store them that way
