Delish Beet Salad

I’ve got a new beet recipe for you!  I actually made it for the first time over Thanksgiving for my family.  The fact that I got a text from my brother asking for the recipe the following week is a pretty good testament to the fact that it’s a good recipe. 🙂

In my last beet salad recipe, I explained the natural detoxification benefits of beets.  Who needs these CRAZY detox plans where you essentially have to starve yourself, when you can just take small steps to add healthier foods to your diet?

Before we get to the recipe, just a reminder that you can save the beet greens for your smoothies and put them in instead of spinach or kale!

Ingredients:

  • 4-6 medium beets, skins on
  • ½ cup parsley, chopped (or 1-2 TBSP dried)
  • 2 cloves garlic, minced
  • 1 TBSP dried basil (use fresh if you've got it!)
  • 1 TBSP olive oil
  • 1.5 TBSP balsamic vinegar
  • salt and pepper to taste

Directions:

  1. Add beets to a large pot of boiling water
  2. Boil the beets until you can easily stick a fork through them (approx 30-40 min)
  3. Meanwhile, add parsley, garlic & basil to a bowl
  4. When beets are cooked, remove skins
  5. Chop into bite size pieces and add to bowl
  6. Drizzle olive oil and balsamic and mix well
