6 Ingredient Protein Bites

I have a love affair with pumpkin seed butter, for a few reasons! Firstly, pumpkin seeds are an excellent source of zinc, as is pumpkin seed butter! With cold and flu season approaching, I am working on getting my 'immune' nutrients up, and one of the most important ones is zinc.

Another reason I love pumpkin seeds is pumpkin seed butter has 5g of protein per TBSP. Amazing!! Of course, you can substitute any other nut or seed butter in this recipe.

Serves:

15 balls

Ingredients:

  • 1 cup pumpkin seed butter (or other nut or seed butter)
  • 15 Medjool dates, pitted
  • 4 TBSP Genuine Health unflavoured collagen, or other brand
  • 2 TBSP coconut flour
  • 1 tsp vanilla extract
  • Sea salt to taste

Optional Additions:

  • raw cacao powder
  • cinnamon

Directions:

  1. In a food processor, add all of the ingredients.
  2. Pulse until well mixed and a dough like consistency is formed.
  3. Roll into 1.5-2 inch balls.
  4. You can serve as is, or then roll them in cinnamon or raw cacao powder. I like them in cinnamon, though they are great plain too!
