6 Ingredient Protein Bites

I have a love affair with pumpkin seed butter, for a few reasons! Firstly, pumpkin seeds are an excellent source of zinc, as is pumpkin seed butter! With two little ones at home, I'm always working on getting my 'immune' nutrients up, and one of the most important ones is zinc.

Another reason I love pumpkin seeds is pumpkin seed butter has 5g of protein per TBSP. Amazing!! Of course, you can substitute any other nut or seed butter in this recipe.

Serves:

15 balls

Ingredients:

  • 1 cup pumpkin seed butter (or other nut or seed butter)
  • 15 Medjool dates, pitted
  • 4 TBSP Genuine Health unflavoured collagen, or other brand
  • 2 TBSP coconut flour
  • 1 tsp vanilla extract
  • Sea salt to taste

Optional Additions:

  • raw cacao powder
  • cinnamon

Directions:

  1. In a food processor, add all of the ingredients.
  2. Pulse until well mixed and a dough like consistency is formed.
  3. Roll into 1.5-2 inch balls.
  4. You can serve as is, or then roll them in cinnamon or raw cacao powder. I like them in cinnamon, though they are great plain too!
