Detox Salad with Avocado Dressing

I’ve got a new detox salad recipe for you and it’s SO delicious, combined with having kick-ass health benefits.  I recently wrote an article over at Shedoesthecity.com, and it was about 3 naturally detoxifying foods. Cabbage was one of them.  If you’re like my family, cabbage used to be considered something our great grandmother’s forced us into eating, but after smothering it in this delicious dressing, you won’t be thinking that for much longer!

The picture in this post looks a little different to how the salad will turn out, because this salad wasn’t fully dressed.  I ended up dressing it with the same salad dressing as my broccoli salad recipe because, well, it’s just so good.

Ingredients:

Salad Ingredients:

  • ½ large head of red cabbage
  • 6 carrots
  • ½ cup cilantro

Dressing Ingredients:

  • 2 medium avocados
  • 1 lemon, juiced
  • ½ cup olive oil
  • ½ cup water
  • 2 cloves garlic
  • 2 tsp honey
  • 2 tsp parsley (I used dried, but could use fresh)
  • salt & pepper to taste
  • cayenne to taste

Directions:

  1. If you have a food processor, grate the cabbage and carrots in it
  2. If you don't, roughly chop the cabbage, and grate the carrots by hand
  3. Chop the cilantro and mix all together
  4. Add all dressing ingredients into a food processor, except the olive oil and water
  5. While the food processor is running, drizzle in oil and water and mix well
  6. Cover salad in dressing – note that depending how creamy you want it, you may have leftover dressing
