One Pan Salmon & Veggies

As I got home from the grocery store on Sunday with my loot for this week’s meals, I realized that the two meals I had decided to make were SO simple and fast. I decided to see if I could cook them both in 30 minutes. Unfortunately, it took 35, not 30. 😉 But, I figure that’s pretty good!! Especially because you’ll have enough for leftovers for lunch.

Ingredients:

  • 3 cups green beans, ends removed
  • 3 cups cherry tomatoes
  • 1 red onion, roughly chopped
  • 3 filets salmon
  • 1 TBSP olive oil
  • 1/2 lemon, juiced
  • 2 TBSP good quality balsamic vinegar (I like Acropolis)
  • salt & pepper to taste

Directions:

  1. Preheat oven to 500F (Yes, 500F)
  2. Line one baking sheet with parchment paper
  3. Put green beans, cherry tomatoes and onion on baking sheet and drizzle with olive oil, salt and pepper.
  4. Toss around so evenly coated
  5. Bake for 10 minutes
  6. After 10 minutes, create a space on the baking sheet for the filets of salmon and place them on it (leaving the veggies on it too)
  7. Drizzle lemon juice, salt & pepper on to salmon and put back in the oven for 10 minutes
  8. Once cooked, drizzle with balsamic vinegar and enjoy
