Chocolate Chia Pudding

I posted this recipe on a Mind Body Green article, but I think it’s worth sharing again because it really does satisfy those cravings.

If you don’t have stevia, you can add a bit of maple syrup or raw honey, but remember that even though it’s a purer form of sugar, it’s still sugar, so go easy. 🙂

Ingredients:

  • ¾ cup unsweetened vanilla almond milk
  • ¼ cup chia seeds (ground chia seeds makes for a better consistency)
  • 1 cup mixed berries
  • 1 tsp pure vanilla extract
  • ½ tsp cinnamon
  • 1 heaping TBSP raw cacao powder
  • If you need to sweeten it:
  • 1/16 tsp powdered stevia or 2-4 drops liquid stevia (if you don't have it, you can add a bit of honey or maple syrup, but it's optional)

Directions:

  1. If you have a grinder, grind chia seeds in advance.
  2. Place all ingredients in a bowl and mix well.
  3. (If you prefer, you can place in blender, but you may need to add a bit more liquid)
  4. Note: At first the consistency will still be quite liquid. It takes about 5-10 minutes to set in the fridge and then it will be a pudding!
