Beet, Goat Cheese & Walnut Salad

Beets contain something called ‘betanin’ that are high in antioxidants (helpful after eating lots of BBQ’d meat), are anti-inflammatory (good if your joints are painful) and boost your natural detoxification (from all that wine).

Ingredients:

Salad:

  • 3 beets, peeled and diced
  • ⅓ red onion, finely diced
  • ½ cup goat cheese, crumbled
  • ½ cup walnuts
  • 1 5oz tub mixed greens (or spinach)

Dressing:

  • 2 TBSP olive oil
  • 2 TBSP balsamic vinegar
  • 1 TBSP Dijon mustard
  • 1 TBSP maple syrup
  • pinch of salt

Directions:

  1. Place a pot of water on to boil
  2. Peel the beets and dice them into bite size chunks
  3. When water is boiling, add the beets
  4. Boil them for 5-7 minutes, or until you can easily poke a fork through them
  5. While beets are cooking, place greens, onion, goat cheese and walnuts in a bowl
  6. Mix together the dressing in a separate bowl
  7. Add cooked beets and dressing to the salad and toss well
