Almond Zucchini Muffins

It must be the Nutritionist in me, but I love recipes where you can sneakily get away with adding extra veggies without really knowing. These Almond Zucchini Muffins are just that. They are loaded with healthy fats and is naturally sweetened with real fruit and just a bit of coconut sugar (which has a lower GI than cane sugar). Enjoy!

Ingredients

  • 1 1/2 TBSP ground chia seeds⁣⠀
  • 4 1/2 TBSP water⁣⠀
  • 1 cup grated zucchini⁣⠀
  • 2/3 medium banana, mashed⁣⠀
  • 1/4 cup melted coconut oil⁣⠀
  • 1/4 cup maple syrup⁣⠀
  • 1/2 cup applesauce⁣⠀
  • 1/2 cup coconut sugar⁣⠀
  • 1/2 tsp sea salt⁣⠀
  • 1 1/2 tsp baking soda⁣⠀
  • 1/2 tsp cinnamon⁣⠀
  • 1/2 cup almond or coconut milk, unsweetened⁣⠀
  • 1 cup + 1 TBSP almond meal (you can just grind almonds in food processor)⁣⠀
  • 3/4 cup coconut flour⁣⠀
  • 1/4 cup almond flour (this is different and finer than the almond meal)⁣⠀
  • 1/4 cup walnuts, chopped⁣

Directions

  1. Make a chia egg by combining the ground chia seed and water in a bowl and set aside.⁣⠀
  2. Heat the oven to 375F and get a muffin tray ready with parchment paper muffin liners.⁣⠀
  3. Grate the zucchini (I used the food processor to save time) and squeeze out extra moisture using paper towel..
  4. Combine the mashed banana with the chia egg in a mixing bowl.⁣⠀
  5. Then, add in the melted coconut oil, maple syrup, applesauce, coconut sugar, salt, baking soda and cinnamon and whisk to combine.⁣⠀
  6. Add in the grated zucchini and almond milk and whisk again.⁣⠀
  7. Mix in the almond meal, coconut flour and almond flour and stir until just combined.⁣⠀
  8. Gently mix in chopped walnuts (or you can top the muffins with these once they are in the tray).⁣⠀
  9. Place batter in 12 muffin trays and bake for 30-34 minutes or until toothpick comes clean. Let cool before removing from tray.⁣
