4 Ingredient Paleo Pancakes Recipe

I’ve been wanting to try these for quite some time now. For me, pancakes have tended to be sort of a ‘flop’ type recipe that rarely works out when you make it gluten free. However, a close friend swears by her ‘3 ingredient’ paleo pancakes – banana, eggs & cinnamon. Sounds so simple, right? I thought I’d try the other day, and add in some vanilla protein powder just to give it an extra boost. Well – these did NOT disappoint.

I do think the taste will vary based on the protein powder you use. I was using the Genuine Health Fermented Proteins+ Vanilla, which is not a super strong flavour, yet adds some nice sweetness.

You don’t need to add the protein, however the recipe would likely only make 2-3 pancakes, not 4. You can top them with whatever you want – a dollop of coconut butter and some berries, though I found them sweet enough as is.

4 pancakes

Ingredients:

  • 2 eggs
  • 1 scoop vanilla protein powder
  • 1 ripe banana
  • ½ tsp cinnamon

Directions:

  1. Heat a tiny bit of coconut oil over medium heat
  2. Whisk all ingredients together
  3. Pour pancakes into pan and cook
